•1 cup of cooked and puréed organic green lentils
•2 large mashed sardines 
•1 duck egg
•Pinch of salt

Preheat the oven to 350 F.
Mix lentils, egg, and salt until well combined.
Place tablespoons of the cookie mixture about 1 inch apart on  baking sheet lined with parchment paper.

Bake until golden around the edges, about 15 to 20 minutes (depends on oven).  Remove from the oven and let sit on baking sheet for 10 minutes. Carefully transfer to rack to cool. 

       Optional cookie topping–

 Mix 2 tablespoons of mashed sardines with 2 tablespoons of  goat cheese and  spread on  cookies.



Galtee’s 6th Birthday… Cake Recipe

2 cups Organic Quinoa, 4 Cups Water
1/2 cup Organic Pureed Celery
8 ozs Organic Cottage Cheese

Boil buffalo, quinoa and celery together in 4 cups of water, then simmer covered for 20 min.
Allow to cool.  Line a cake mold with plastic wrap.  Fill mold with mixture (press it down into the mold) and cover with plastic wrap.  Refrigerate overnight.  Then release the cake from the mold and discard the plastic wrap.  Just before presenting the cake, top it with the cottage cheese and decorate.

Quinoa-Blueberry Bites

   Galtee’s Birthday Cake (5th)

3 Cups Cold Cooked Organic Quinoa
3 Cups Cold Cooked Organic Mashed Sweet Potatoes
3 Cups Cold Cooked Shredded Organic Chicken Breast
3 beaten Eggs,  1 tsp. Rosemary,
Tamarind sauce (from Whole Foods)

Boil chicken and sweet potatoes together in water about 3 inches above items.  When they are cooked, use the soup to cook the Quinoa.  When all three are cool, mash the sweet potatoes and Quinoa together, then shred the chicken with a fork and combine all three together.  Add the three beaten eggs and rosemary.  Preheat oven to 375F.  Generously butter a cake mold.  Pour batter into the mold and press it down.  Bake for 1 hour.  Allow to cool, then refrigerate until cold.  Then gently unmould the cake.  Decorate with Tamarind sauce (looks like chocolate).

Slice 1/4 inch rounds of  sweet potatoes.  Bake them in a single layer on a baking sheet @ 250F for 3 hours.  Turn oven off, and turn over sweet potato rounds.  Leave them in the warm oven for 2 hours.  (From Modern Dog Magazine).

Mix:   2 1/2 Cups Quinoa flour,    1 1/2 Cups Oatmeal  flour  &
3/4 Cup of Flaxseed Powder

Puree:  1 Cup water, 1/4 Cup Olive Oil, 2 Eggs, 1 tsp. Vanilla Extract, &
  1 Banana

Add wet ingredients to dry ingredients, and mix well.  Use cookie press to punch out flat cookies, or use a teaspoon to make drop cookies on baking tray lined with parchment paper.

Bake at 350F for 20-25 minutes (for drop cookies), and 10-12 minutes for press cookies.  Leave in warm oven for 2 hours with door ajar, to harden the cookies.



3 Cups Puffed Brown Rice,
Puree:   5 Dates, 1 Ripe Banana, 3 tbsp. Organic Olive Oil, 1 tsp. Vanilla, I Egg
Mix ingredients in food processor, or high-power blender, or by hand.
(Texture of cookies depends on mixing method).

Preheat oven to 350F.  Place teaspoonfuls of mixture on a parchment paper lined baking sheet.   Bake for 10-15 minutes (depends on oven).  Makes about 30 cookies.



Slice bananas and coat them in ground almonds (or walnuts),
and freeze them in a single layer (paper plates work well).

   Tastes like ice-cream!



In food processor, mix:    1 Cup Organic Spelt, 2 Cups Organic Toasted Oatmeal,  1 tsp. Baking Soda, 1 tsp. Cinnamon.

   Puree:  1/2 Cup Olive Oil,  2 eggs, 1 tsp. Vanilla, 16 Dates, , 1 Banana.

Pour wet ingredients into dry ingredients and process until well mixed.
Preheat oven to 350F.  Place teaspoonfuls of mixture on a parchment lined baking tray.
Bake @ 350F for 20 min. or until done–ovens vary.

Yogurt & Peanut Ice Cream
8ozs Organic Peanut Butter
8ozs Plain Greek Yogurt
   8 Pureed Dates (optional).
Puree dates in Vitamix or other high power blender with the yogurt.  Mix all ingredients.  Drop teaspoons of the mixture on a paper plate and freeze.

Quinoa/Blueberry Bites
2 Cups cooked & cooled Quinoa (& honey to taste)
1 cup Blueberries
Puree:  1 cup Apple Sauce,
1/3 cup Peanut Butter,
1 egg,
Add pureed mixture and Blueberries to cold Quinoa
Pour batter into lined mini-muffin cups
Bake @ 350F for 25 minutes
